While he may be a bit biased, his favorite dish on the menu is one he created: the Enchiladas a la Dimas! After more than 22 years, Chef Adelfa is incredibly thankful to earn a living doing what she most enjoys: cooking every day to put a smile on customers’ faces. She has been with Paloma Blanca since the day it opened in 1997. She is proud of the consistency of the food that comes out of the Paloma Blanca kitchen daily and her favorite dish on the menu is the Enchiladas Verdes.
