Meet some of the wonderful members of the Paloma Blanca family who help ensure every experience is exceptional.

The core reason for the success of Paloma Blanca isn’t our cuisine or atmosphere – it’s our family of good people. Many of us have been with the company since its inception, and yes, many of us are actually related to one another!

We take pride in providing each guest with an exceptional experience by endeavoring to live up to the sign you’ll find in our restaurant: We will always work to treat our guests as we would want to be treated.

Oscar brings a history of great achievement and advancement since joining DUO Restaurant Group in 2010. While his first position was as a server at Paloma Blanca Mexican Cuisine, he was soon promoted to floor manager, and then later to assistant general manager.

With the acquisition of Chris Madrid’s to our family of restaurants in 2017, it became obvious Oscar was a natural fit to lead the Chris Madrid’s team as general manager; however, his abilities were soon tested, as a fire broke out 45 days after the acquisition. This led to the necessity to set up a food truck operation until we were able to re-open the facility in September 2019. More challenges were to come for Oscar in his leadership role, given that six months after moving back into the building, the COVID pandemic presented itself in our community.

Oscar handled both circumstances with great determination and effort, and so his promotion to general manager of Paloma Blanca in February 2021 was a well-deserved recognition.

Oscar believes his role in the restaurant is similar to hosting a party. The ultimate goal? To make guests feel at home and loved-on with a superb meal and a wonderful atmosphere.

His adventurous spirit and willingness to seize new opportunities is not just evident in his professional life. Oscar grew up in Southern California and finally made it to Texas at age 16; he has called San Antonio home since 2005. In his spare time, he enjoys traveling to new places and spending time with friends and family over brunch (his favorite meal!), lunch or dinner.

After more than 22 years, Chef Adelfa is incredibly thankful to earn a living doing what she most enjoys: cooking every day to put a smile on customers’ faces. She has been with Paloma Blanca since the day it opened in 1997. She is proud of the consistency of the food that comes out of the Paloma Blanca kitchen daily and her favorite dish on the menu is the Enchiladas Verdes.

Chef Dimas has been serving up the best of Mexico’s cuisine since the day Paloma Blanca Mexican Cuisine opened its doors in December 1997. While he may be a bit biased, his favorite dish on the menu is one he created: the Enchiladas a la Dimas! Chef Dimas is thankful to be a part of the Paloma Blanca team and takes great pride in ensuring we achieve consistent quality in our food offerings.

Sandra Gonzalez has been a floor manager at Paloma Blanca since 2009. She makes use of her attention to detail and warm personality by ensuring great guest experiences while overseeing the front of house. Sandra most enjoys establishing relationships with the many returning guests and their families. Her favorite dish on the menu is the Enchiladas Verdes.

Since 2014, Laura’s outgoing personality and can-do attitude has helped guests create the most memorable catering events, whether Paloma Blanca is invited to cater in homes, in a business setting, or in-house. Laura’s greatest joy is to make sure each person feels cared for and that each has a great all-around experience with superior food and excellent customer service. When she isn’t busy catering, Laura samples her all-time favorite dish, the Pollo al Cilantro, or sometimes the Enchiladas a la Dimas or the Ensalada Chevalita.

Richard’s beginnings in the restaurant industry began in 1997 when he brought several partners together to open Paloma Blanca Mexican Cuisine. Over the ensuing years, this initial restaurant investment transformed into a management career and great passion, as evidenced by his purchase in 2017 of a San Antonio Icon, Chris Madrid’s. Along with the Paloma Blanca/Chris Madrid’s family, he is deeply committed to positively impacting the San Antonio community by supporting family and children’s charities, including South Texas Alliance for Orphans, AVANCE, and the Children’s Shelter, to name a few. He is a member of the Texas Cavaliers, where he served as a past president of the Texas Cavaliers Charitable Foundation. He is a former board member of the Alamo Heights School Foundation and former chairman of the Terrell Hills Planning and Zoning Commission. He and wife, Brooke, are proud parents of twin boys.
