Nelly Mendoza Olsen's history with the restaurant is a great success story. Born and raised in Veracruz, Mexico along with our Asst. General Manager Rómulo Mendoza, she joined Paloma Blanca Mexican Cuisine in 1998 as a hostess. Her management ability, work ethic, enthusiasm, and desire to keep improving Paloma Blanca's operations was evident early on. As a result, she continued to advance from position to position, and was finally promoted to Vice President and General Manager of Paloma Blanca in the Fall of 2003. She now presides over an operation that employs more than 60 full and part-time employees and serves in excess of 3,500 meals a week.

Rómulo Mendoza also has a great history of advancement with Paloma Blanca. Born and raised in Veracruz, Mexico with his sister and our General Manager Nelly Mendoza Olsen, he initially worked for the company from 1999-2001 as a member of the wait staff. He returned in 2003 as a member of the wait staff, but became a floor manager almost immediately due to his attention to detail and winning rapport with our guests. Sharing his sister's enthusiasm and desire to constantly improve operations, he was quickly promoted again to Assistant General Manager in the Spring of 2004.  In addition to his management duties, Rómulo, an avid artist, is also responsible for all of Paloma Blanca’s special occasion & private function floral and décor designs, as well as for all out-of-house presentations and functions.
